HEARTBURN AND GASTRIC REFLUX

Cooling Chamomile Infusion

Heartburn is sometimes brought on by stress, and it is often a byproduct of indigestion. Chamomile not only relieves stress, but also soothes indigestion. Honey helps soothe the esophageal lining while aiding digestion and promoting healing.

MAKES 1 DOSE

2 tablespoons dried chamomile flowers, or 4 tablespoons fresh chamomile flowers

2 cups water

2 tablespoons raw honey

1. In a medium saucepan, combine the chamomile flowers and water and bring the water to a boil over medium-high heat. Reduce the heat to low and allow the mixture to simmer for 10 to 15 minutes, until the volume has been reduced by about half.

2. Remove the saucepan from the heat and pour the mixture through a fine-mesh sieve into a mug, using the back of a spoon to press any remaining liquid from the flowers. Compost the solids.

3. Add the honey, stirring well to ensure it melts into the infusion. Allow the liquid to cool until it is comfortable to sip.

4. Drink this infusion as often as you like to keep heartburn at bay.
